APRICOT – A great way to convert the dried apricot into something delicious.
The recipe below is so easy and has amazing flavours, it transforms the dried apricot to another level. This is delicious served with crusty bread and cheese, a great accompaniment to a cheese platter.
APRICOT & CHILLI CHUTNEY – INGREDIENTS
250g dried apricots, chopped
6 chillies, chopped
250g brown sugar
1 teaspoon salt
1 small piece fresh ginger, finely sliced
600ml white vinegar
Soak the apricots overnight in water to cover. Next day, cook in the same water until the apricots are soft. Add the remaining ingredients and simmer gently, uncovered for roughly 50 minutes.
Pour into hot clean jars and seal.
