CHICKEN AND CORN SOUP

INGREDIENTS

Chicken and corn soup

200g minced chicken

1 egg white

2 tablespoons water

440g can creamed corn

3 cups chicken stock

1 teaspoon soy sauce

1 teaspoon sesame oil

1 1/2  tablespoons cornflour

1/4 cup water, extra

Place chicken, egg white and water in bowl; mix well, stand 10 minutes. Combine corn, stock, sauce and oil in medium pan, stir over heat until boiling; simmer, uncovered, 3 minutes. Stir in blended cornflour and extra water. Cook, stirring, until soup boils and thickens. Add chicken mixture, cook, stirring, 2 minutes.
